No matter how cold, going with stainless steel is not advised. It's thermal conductivity is horrible among metals. Due to its nickel and chromium content, it's also pretty high on the galvanic chart meaning it tends to corrode most other metals. Yeah, corrosion inhibitors mitigate this concern, but so does sticking with similar metals throughout the system.
