With regard to heatsinks on the graphics cards memory, I've got a Radeon 8500 it has 4 memory chips on both sides of the board (directly on the other side). Is it recommended to get 2 x 4 heatsinks and cool both sides or is this overkill ?

I dont think its overkill to just put heatsinks on memory. Worst case scenario, it wont do anything, good or bad. But best and and more likely scenario, it will lower temps a little with no negative side effects.
