Well, that's not so terrible, that air can still hold 25% more water.

That means that convection is going to take most of the cooling job. As in a common heatsink, airflow speed is going to be the key factor in your bong performance. Still this can be an interesting experiment, as you could measure the water loss on different days with different ambient humidity, and determine the efficiency relationship.

According to an excel spreadshet I have, one liter of evaporation in an hour takes 627 watts. So just knowing the total heat input and water loss per hour, is easy to know what percentage of the total cooling is from evaporation.
