risks involved in removing geforce 6800 stock heatsink
 
is there a risk free safe way to do this where you can be confident ur not damaging the card?

Dont use a screwdriver, dont use much muscle, dont do it on a cold dry day with socks on, ect. Basic steps need to be taken not to damage any electronics.

so whats the technique? benchmark the card to get it hot, then quickly power off, pull it out, and remove the heatsink screws and "gently" try twist and pull the heatsink off?

I heard it would be easier if you put the card is a zip lock bag then put it in the freezer for a while...
it suppose to make it easier to remove the heatsink...
although i havn't tried it (havn't needed to)

Most of that is overkill. Heatsinks on 6800 are held by a few screws and once you unscrew 'em all you'll find is simple thermal tape. Just don't use excesive force. Dont pull but twist and it'll come off easily.
And it was already asked, so what make is your card? What kind of heatsink is on it?
