How does bong cooling work?

I understand the principals of evaporation cooling something, but how does bong cooling exactly work?

It's like imitating a rain fall's cooling process.

That article explains it.

If air is less then saturated, water in contact with it will evaporate. Bongs drop a lot of drops of water through dry air. The result is that a lot of water evaporates. Each mol of water draws something lik 55kj of heat (going from memory here) with it. Thus a small amount of water provides a lot of cooling.

It uses the latent heat of vaporization of water - anyone passed senior high school should have learned this stuff in chemistry :)
