For water to evaporate it needs energy (heat), that heat comes from the water left behind which becomes cooler as a result.
A good evaporative cooler will expose as much surface area of water to as much airflow as possible, you
want to evapoate the water, any schemes to try and re-claim the evaporated water in any practical/efficient manner are doomed to failure.
