Actually, the effect can be reproduced at home: mix some corn starch and some water in a low aluminium plate, then put your hand flat into the mixture. If you raise your hand slowly, it'll pull out of the mixture, as you would normally expect. If you try to go quicker, and slam your hand back down, the whole liquid will solidify to where it'll take the aluminium plate with your hand movement...

Isn't kitchen physics fun?
