I don't know much about the Pelts - so I don't know if the above listed is what I need. Also - how much power would be needed to drive those?
I'm thinking of using a Lian Li PC-75B Full Tower. It seems to be tall enough that if I need to put two power supplies in there I can fit them in the top. But it's a little on the spendy side for something I'm going to be dremeling/drilling.
Any help would be greatly appreciated!

You seem to be a guy with some spare change given you have a Opteron to begin with. And if you add up all the costs associated with your proposed water cooling setup, plus the fact you will need to buy an additional, rather expensive power supply (your pelts as you envision will burn ~475W by themselves, constantly), and the $300 case, I don't see why you just don't bump it up a little bit more and get a Vapochill. Granted the GPU won't be liquid cooled, but the CPU will run
a lot cooler, you'll get a higher overclock, and consume only about a fourth of the excess power from the wall than with your proposed dual pelt setup. Not to mention the rig will be much more tidy.
Given your buying all the components and all, I am guessing your motivated more by getting your computer as fast as possible cost-no-object, rather than for the fun of experimenting and modding. Definitely get the Vapochill I say at that cost.
