Default suggestions on new pc

all right, here goes.. the most commonly asked question here:
what should i put in my new computer?

a few things i'd like to point out:

1) i'd like to stick with nvidia and amd. they've both treated me incredibly well, and i'll support that.

2) i definitely want to watercool this. no questions asked.

3) it's a gaming machine, with occasional video/audio/graphic editing for school to be done on it. i'll have a fileserver setup so i won't be storing all too much on it.

i've been looking at pci-e and it looks pretty damned nice. i'd like to find an athalon-64 mobo that supports it, but haven't had any luck thus far.
also, i'm wondering if the athalon64 is really worth the money. my last box was a 2100+ which oc'd incredibly well. i hear the 2500 is worth every penny extra because of the increased fsb, but is the 64 really that big of a jump? i'm considering a duallie, but as of yet, i haven't seen a decent dual-amd mobo. i haven't been keeping up on things lately though, so try to catch me up on new happenings. thanks for the help in advance!
