If the sensors are flat, you could likely just use frag tape to attach 'em to the outside of the header tank (and maybe insulate the back side with some closed cell weatherstrip tape or such like). It won't be accurate enough for telling exactly what your coolant temp is but it had ought to be plenty good enough for controlling fans.
Just a thought, of course...
