Aluminum will work to, but remember the copper/al mix is supposed to be bad, but i imagine the top wouldn't really be touching the water all that much.
Also instead of rubber, try and get a grove milled around the bottom of the Al lit to where a O ring will fit in it. Look kinda professional.
