You can't put the probe ON the core, but you can press it against the side of the core, if your HSF (or waterblock) leaves you a good enough gap. Don't mess with it though, if the probe lifts the block, it'll fry your CPU!

The core idea works, but has lots of variables, because you're never sure if the probe is touching the core, especially if the probe wires have tugged the probe away a little bit.

The under-core idea works very well, it's much more reliable, but there's a delay between the core heating up, and the probe picking it up. Also, because the probe is so far away, there is an offset, where the probe will read a cooler temp than the actual core temp. BIOS compensate for this with a little math.
