Phase change with water is tremendously effective until the water eats a hole in the metal, not to mention shorting out the compressor motor coils. Pure water vapour is VERY reactive, which is one of the reasons early refrigeration pioneers rejected it. Think "rust at lightspeed" and you'll understand.
