To put some specific numbers on it...
Liquid water has a specific heat of 1 Calorie/(gram*Kelvin). The heat absorbed by 1 gram of water in transitioning from liquid to vapor is about 600 Calories.
Roughly speaking, removing 0.17% of a body of water through evaporation, drops the body of water 1C
