1. With 3 blocks, you might want to upgrade the pump in the future, especially if you get a rad/heatercore thats very restrictive.
2. You can get plastic & copper fittings at your local hardware store (Lowe's, Ace, True Value, etc). I personally prefer the plastic fittings because they're less bulky, they weigh less, you don't have to worry about corrosion, and they cost less. To compensate for the T, use one 1/2 T, then run a short piece of hose from that to a 1/2 to 1/4 piece.
(3) Your routes for tubing seem to be ok. I personally prefer Pump>rad>cpu>other blocks>pump which is basically what you have, good choice.
