What is the point of watercooling? What's the difference between 90 degrees and -16 degrees? If it runs well it runs well, right?

I water cool for the specific reason of lowering the noise level. with my fop 38 my computer was so loud that it use to wake my daughte up! now it is as quiet as a mouse and running cooler. also after like 18 hours of mechwarroir 4 my fop 38 would start to loose the battle with heat. my new water cooled rig doesn't have that prob;em.
