most people are around 2-5mm.
it'd pay to make it 6mm thick, then sand down, until you get your best temps |

Top has no bearing on performance, but it may be harder to seal then copper because you can't solder plexy.

make the channels about 9mm wide, cause 3/8 is 9.5mm wide
