Ok, I'm at the point where I can drill holes and thread them so I can put barbs in... I am using 1/2" ID tubing. What size barbs/taps do I need? I went to homedepot and got real confused looking at what they had.

you will want either a 1/2" or 3/4" BSP tap. that should be right (it is in my country!)

You want a 1/4" NPT tap being your in the USA. That takes a 7/16" drill bit. Make sure you make a pilot hole(s) first.

Ok I have a 1/4 NPT tap and 1/2 to 1/4 MPT barbs, how bad is that? They seem to make a tight fit but I won't know until it's all sealed and ready for leak testing...
