Default Adapting a flow switch

I found a company that offers these. I was wondering how exactly they work and if you could adapt them by adding a toggle switch to manually control it.

it looks like it's kinda like an electric flow meter. the RC-FCS-22 says it switches on with .8 gal/min. so, theoretically you could hook the switch up to an emergency relay or something that would kill your system if the flow quit in a wc setup.
